After hearing about these tasty little bites, I needed to make a vegan version and wow, they were decadent and delicious! What’s not to love about cheese and butter; but the great thing is, you can enjoy the vegan version just as much. Gougères are a French savory pastry made with butter and cheese. These were not as fluffy as the traditional gougères but they were still a winner that everyone will love. These little bites are a great appetizer and pair well with champagne or wine.
Directions
Preheat oven to 450F. In a medium saucepan, bring the water, butter, and salt to a simmer over high heat. Reduce to medium heat, add the flour and stir well for about a minute or so. Remove the pan from the heat and let it cool for a few minutes. When the dough cools a little, slowly add the egg replacer while stirring or using an electric hand mixer. Next, add in the cheese and mix well.
On a parchment lined baking sheet, spoon or pipe about a tablespoon of the batter. Push down the little peaks so they don’t burn quickly in the oven. Bake them for 10 minutes at 450F; then turn the oven down to 350F and bake for another 15 minutes or until golden brown. Allow them to cool a few minutes before serving.
