Ingredients

  • 2 cups chickpea flour
  • 1/2 teaspoon sea salt
  • 3 cups water
  • 1/4 cup of olive oil + more for drizzling
  • sea salt flakes for topping

Farinata is a popular flatbread from Liguria, Italy that is made with just a few ingredients. The star of this recipe is chickpea flour which actually gives this flatbread an almost eggy texture. You won’t believe how simple this is to make! You will need an oven safe skillet or pan. Cast iron is great. One large pan or two smaller pans work well. It is vegan, gluten free, inexpensive, and makes a delicious appetizer, snack or breakfast. Feel like you’re in the streets of Northern Italy and make some of this tasty Italian street food to enjoy. Directions

Add the chickpea flour and sea salt to a large bowl. Whisk in the water and stir to avoid clumps. Cover with plastic wrap and let it sit for two hours. No need to keep in the refrigerator.

After the two hours, place a large cast iron or oven safe pan in the oven and heat oven to 450F. Once the oven gets to temperature, carefully take the pan out with oven mitts and place on stove or trivet. Pour the olive oil into the hot pan, and then pour in the batter. Place pan back in the oven and bake for 20 minutes or just starting to become golden. Remove from oven and sprinkle with flake salt. You can drizzle with a little more olive oil if you’d like and garnish with fresh rosemary. Cut into wedges and serve hot or warm.
