Ingredients

  • 4-6 slices of panettone or other bread
  • 2 cups vegan milk
  • 1/3 cup light brown sugar
  • 1/2 cup raisins (soaked in Cognac - optional)
  • Marchesi Di San Giuliano Sliced Sicilian Oranges in Syrup - optional
  • zest of one orange or one orange and one lemon
  • chopped pecans - optional
  • maple syrup for drizzling - optional
  • vegan butter for greasing dish

What to do with that leftover panettone ? Well you can use any bread; but to make this dish really pop with extra flavor, my homemade panettone will make it even more delicious. This is perfect for brunch; but it could also be a dessert. And if you really want to gild the lily, top with Marchesi Di San Giuliano Sliced Sicilian Oranges in Syrup. You can find this on Amazon or in specialty Italian markets. They are organic sliced Sicilian oranges in a brandy syrup. They are delectable and I highly recommend if you can find them. If you don’t have these oranges, fresh grated orange zest will do. You can also top with a little maple syrup.

Directions

Preheat oven to 350F. Cube the bread slices and set aside. Add to a bowl, the milk, brown sugar, raisins and orange and lemon zest if using and whisk together. Add in a little more milk if needed, depending on how many slices of bread you’re using. Next, grease a medium to large oval or square baking dish with the butter. Add in your cubed bread to the baking dish. Optionally, you can top with some chopped pecans. Pour the milk mixture evenly over the bread. Top with orange slices if using. Cover and bake for 30 minutes. You can then uncover and leave in the oven another few minutes. Top with some maple syrup if you wish. Serve warm. Keep remainder in the refrigerator for up to 3 days.
