Ingredients

  • 1 10 ounce package of frozen broccoli florets
  • 1 cup of cooked white beans
  • 4 cups of vegetable broth or miso (use 3 cups for a thicker soup)
  • salt and pepper to taste
  • microgreens or herbs for garnish, optional

This is one of the easiest, quickest recipes that is so nourishing, comforting and delicious. Nutrient dense and fiber rich with just a few ingredients and you can enjoy a fabulous, yet simple meal. It freezes well too to enjoy for another time. Use a little less vegetable broth or a little more of the beans for a thicker soup.

Directions

Cook the broccoli in the microwave or according to package instructions. Drain any liquid from the cooked broccoli and add to a blender. Then add the beans and broth to the blender, along with a pinch of salt. Blend until smooth. Season with salt and pepper to taste. Serve warm with some toasted sourdough bread and garnish with microgreens or herbs for serving. Enjoy!
