Laura's Vegan Table


  • 24 - 26 cremini or baby Bella mushrooms, cleaned and stems removed
  • 2 cloves of garlic, minced
  • 1/2 cup lightly salted breadcrumbs (if using plain, you'll want to add a bit more salt to the recipe)
  • 1/2 cup grated vegan Parmesan
  • 1/3 cup olive oil
  • 2-3 tablespoons fresh herbs (I used oregano and thyme)

These delicious, savory mushrooms are a great appetizer for any occasion! Easy to make and SO tasty! Can be made gluten free with gluten free breadcrumbs.

Add the garlic, herbs, breadcrumbs, Parmesan and olive oil to a bowl and stir to combine. Fill the mushroom caps with the filling and place the mushrooms on a parchment lined baking sheet. Bake in a 400F oven for 25 minutes or until tops are golden brown. Serve warm.
