Delicious meaty mushrooms replace chicken in this traditional southern French dish. White wine, green olives and thyme are some of they key elements that make up the dish. Lots of flavor here and fresh ingredients. I used oyster mushrooms here and tried it with lion’s mane also. Both were very flavorful.

Directions
Preheat oven to 400F. Rinse the mushrooms and lightly dry with a paper towel. Season with the salt and pepper. Add the oil to an oven safe saute pan or skillet and set on medium high heat. Place the mushrooms in the pan and brown for a few minutes on both sides. Remove the mushrooms from the pan and set aside. Add in the remaining ingredients to the pan and bring to a simmer. Turn off the stovetop, add the mushrooms back into the pan, and over with a lid. Cook in the oven for about one hour. Serve with potatoes, bread or rice.
