Laura's Vegan Table


  • 2 pounds of carrots, peeled, ends removed, sliced in half if large, and sliced lengthwise
  • 4 tablespoons vegan butter
  • 2 tablespoons maple syrup
  • 2 tablespoons brown sugar
  • 1/4 teaspoon garlic powder
  • salt to taste

Carrots prepared with butter, maple syrup and brown sugar are sure to please everyone at the table. This is a great side dish for the holidays, or any day.


Preheat oven to 400F. Melt butter in a small dish in the microwave or in a small pot on the stove. Place carrots on a parchment lined baking sheet. Pour the melted butter over the carrots, then add the maple syrup, brown sugar and garlic powder. Toss to coat and arrange in a single layer. Sprinkle with salt. Roast in the oven for 20 minutes; turning over the carrots halfway through to roast both sides evenly.
