This rice dish was my Great Grandma Jennie’s recipe, that is known as Riso al Forno; Italian for “baked rice”. She passed it down to my Grandma Mary, who would often make this dish, and then to my Mom, would make this for us too. It’s a simple recipe that has been passed down through the generations, and it’s quite the comfort food. I remember enjoying this dish as a kid, so I wanted to make my own vegan version of it. It makes a great family meal that everyone will love!
Directions
Add the rice and 2 cups of water to a pot. Cook according to package instructions. While the rice is cooking, add the oil to a pan on medium high heat. Break up the sausages into small pieces and cook until slightly browned. Set aside.
Add the cashews and 1 3/4 cups water to a high speed blender. Blend until smooth. Set aside.
Preheat oven to 350F.
When the rice is done cooking, add the sausages, parmesan, parsley, salt and pepper to the rice. Mix together with a spoon or spatula. Grease an 8×8 or 9×9 baking dish with some olive oil. Pour in the rice mixture and spread evenly in the dish. Pour the cashew cream evenly over the rice. Sprinkle with paprika. Cover the dish with foil and bake for 30 minutes. Remove foil and bake for another 5-10 minutes to slightly brown the top. Let sit a few minutes before serving. Can be cut into squares like you would serve lasagna. Buon appetito!
