Pizza

  • 1/2 box of Namaste gluten free pizza crust (or other pizza crust of your choice)
  • 1 1/4 cups water
  • 1 teaspoon melted coconut oil (or other oil)
  • 6 fresh figs - cleaned and sliced
  • large handful of baby arugula
  • store bought balsamic glaze or other balsamic vinegar

Almond Ricotta

  • 2 cups blanched almond flour
  • 3/4 cups water or plant based milk
  • 1/2 teaspoon salt
  • 1 teaspoon lemon juice
  • 1/2 teaspoon of garlic powder
  • 1 teaspoon maple syrup or agave nectar

Figs are in season right now and they are such a beautiful fruit. High in folic acid, fiber, potassium and calcium, these versatile fruits can be eaten as a snack, added to a salad or topped on pizza. I just love the way they look on a dish with their green, purple and pink colors. Adding some arugula, simple homemade ricotta and a little balsamic to a store bought crust makes the dish ready very quickly. I happen to love this Namaste brand pizza crust. I don’t require gluten free foods; but this crust is so delicious and simple. But you can always make your own crust if you prefer.

Directions

Preheat the oven to 450 degrees; or make your own crust according to directions on the package. Put the crust in the oven for 20 minutes (or as per the package instructions). Meanwhile, make the super simple almond ricotta. Add the almond flour and other ricotta ingredients to a bowl. Mix well to combine and add more of any ingredient that it needs. When the crust has been cooked first, remove it from the oven. Add the arugula, sliced figs, and spoonfuls of the ricotta. Drizzle a little balsamic glaze over everything and put back in the oven for about 10 minutes. Remove from oven when done and top with a little extra fresh arugula and glaze if you wish.
