If you’re looking for an alternative to mashed potatoes, cauliflower and celeriac (celery root) are great options. They have a similar look and flavor when cooked, to traditional mashed potatoes. Celeriac has lots of vitamins and fiber, so using these two veggies are a great way to incorporate more fiber into your diet, without sacrificing taste. You can find celeriac in the produce section near the beets and carrots. It’s a root vegetable that doesn’t look very pretty, but has a nice flavor. Just a few ingredients here and easy to make.
Directions
Set a large pot of water on the stove and cover until it starts to boil. In the meantime, peel the outside of the celeriac and cut off the stalk. Chop into small chunks and set aside. Cut the cauliflower into chunks, then add both the celeriac and cauliflower to the boiling water. Cook until tender, about 15 minutes. Preheat oven to 350F. Drain the veggies and when they have cooled down a bit, add them to a food processor or blender until smooth. Add a little water if needed. Return mixture back to the large pot, and add the butter, thyme, salt and pepper. Place in the oven for 15-20 minutes until slightly browned. Serve warm.
