Summertime is perfect for barbecues, and there’s nothing better than tasty barbecue foods that are healthy AND cruelty free! Beets help fight inflammation, keep blood pressure in check, improve athletic performance, help support digestive health and have anti-cancer properties. I had this idea to make the beets as “ribs” when I noticed that they really looked like meat when I sliced the fresh beets. It ended up being a super simple and flavorful dish. A little messy; but very simple. Just look for the largest beets you can find. I used ones that were about a pound each. Can be served as a main dish or appetizer. This dish is vegan and gluten free.
Directions
Preheat oven to 425 F. Peel the beets and slice into strips. Place them on a parchment lined cookie sheet in a single layer. Sprinkle with garlic powder to season. Roast them for about 30 minutes. Then take them out of the oven and brush them liberally with the barbecue sauce. Reduce heat to 400 F and place the beets back into the oven for another 15 minutes or so. Serve warm.
