Ingredients

  • 5 strawberries (I use organic)
  • about a teaspoon or chunk of fresh, peeled ginger
  • 1 tablespoon of Dragonfruit powder
  • 1 1/2 cups of water and a few ice cubes

This smoothie is as refreshing as it is beautiful. Dragonfruit (or Pitahaya) is a vibrant magenta colored fruit from a cactus in Costa Rica. You can buy the fruit in many grocery stores; or you can get the freeze-dried powdered version that I used here. (I get mine from Wilderness Poets online – in Oregon; but you can also find online from other retailers). This fruit is loaded with antioxidants and a little sweet. Add in some ginger and strawberries for a quick pick me up smoothie.

Directions

Add all of the ingredients to a high speed blender and blend until smooth for about a minute or so. Pour into a tall glass. This is not a very sweet drink, so if you prefer it a little sweeter, you can add a little pineapple or banana. The proportions will change the color a little bit so just adjust them to your own preference. Cheers!
