Ingredients

  • 1 cup raw, unsalted cashews (soaked in water overnight or put in boiling water for 15 minutes - then drain)
  • 2/3 cup plant based milk
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 4 Tbsp maple syrup or organic cane sugar
  • 1/4 tsp salt
  • 2 tablespoons sliced or chopped almonds

Creamy, delicious, decadent + dairy free homemade almond ice cream made with cashews.  Simple recipe made with just a few simple ingredients and no fillers, I’m sure you’ll love this yummy treat!

Directions

In a food processor or high-speed blender, combine all ingredients (except for the almonds) and blend until mixture is creamy. Then add the almonds to the mixture and stir with a spatula. Pour mixture into a freezer-safe container and freeze for 4-5 hours or overnight. Take out a few minutes before serving. Top with some extra almonds or cherries.
