Ingredients

  • 4 medium red potatoes, scrubbed
  • 1/4 cup dijon mustard
  • a few tablespoons white balsamic vinegar (you can also use other kinds of vinegar, but the white balsamic is very smooth)
  • 2 tablespoons capers
  • 1/3 cup chopped fresh dill
  • salt & pepper to taste

If you love potatoes like I do, you will love this potato salad! What makes this different than most potato salads is that it has virtually no fat or cholesterol; yet it’s tangy and creamy. Dijon mustard makes all the difference in this lovely side dish. The fresh dill lightens it up. This dish would be great for picnics and gatherings. Add some chick peas and a handful of greens to make it a complete lunch!

Directions

Bring a large pot of water to a boil. In the meantime, cut the potatoes into evenly sized pieces; roughly 1″ size chunks. Add the potatoes to the boiling water. Cook approximately 12 minutes, or until potatoes are tender when pierced with a fork. Drain and add to a large bowl. Add the remaining ingredients to the potatoes and toss to combine. Place in the refrigerator until ready to serve.
