Ingredients

  • 1 12 ounce bottle of JustEgg
  • 1/2 cup flour
  • 3/4 cup plant milk
  • pinch of sea salt
  • 2 tablespoons olive oil (or other cooking oil)
  • a few slices of vegan cheese
  • dollop of dijon mustard
  • chopped arugula, parsley or chives for garnish

Also called a German Pancake, a Dutch Baby is similar to a popover. It’s a soufflé-like eggy pancake and is great for breakfast, brunch, lunch or dinner. This one is savory and made with the key ingredient/product called JustEgg. It is a vegan egg alternative and it is absolutely delicious and tastes just like traditional scrambled eggs. Many grocery stores are selling it now and you can find it in the refrigerated section next to the eggs. It comes in a bottle that looks like yellow mustard, and it’s actually made with beans and has zero cholesterol. Really incredible and you should definitely give it a try. This recipe is a great way to use this product and I hope you enjoy it!

Directions

Preheat oven to 425F, with a medium cast-iron skillet (10 – 12 inch diameter is a good size), and place it inside the oven on the center rack. In a blender, add the JustEgg (shake bottle well first), flour, milk and salt. Blend until frothy, about 1 minute. Remove your heated pan from the oven, pour in the oil and turn to coat the bottom and sides. Pour the mixture into the pan and place back in the oven for 20 minutes. Take the pan out, and add the cheese on top. Turn the oven off and let the cheese melt a little on top in the warm oven. Remove after a couple minutes and top with mustard and garnish (optional). Serve and devour immediately.
