Laura's Vegan Table

Ingredients

  • 2 cups walnuts
  • 2/3 cup cacao nibs
  • 1/4 cup cacao powder
  • 1/8 teaspoon sea salt
  • 2 cups pitted dates
  • Dragon Fruit powder for dusting (also known as Pitaya powder) available in health food stores and online

These little brownie bites just give a little sweetness and are just the right size. Sweetened with dates, they’re a healthier alternative to traditional brownies. The dates add fiber and potassium, and are a natural sweetener. Perfect when you have a craving for something sweet but don’t want to over indulge. Cacao is the purest form of chocolate you can consume. So by substituting cacao for chocolate, you are getting the raw, unprocessed form. Cacao is also high in antioxidants and magnesium. Topped with the shocking pink Dragon Fruit powder (or Pitaya powder), you get even more antioxidants, in addition to vitamin C and vitamin B. These bites are also gluten-free, and free of refined sugar.

Directions

Place the walnuts, cacao nibs, sea salt, and cacao powder in a food processor and process for about half a minute or until it is well combined and crumbled. Add the dates and process for another half a minute or so until the mixture is sticking together well. When combined, shape the dough into 1″ size balls with the palms of your hands. Put in the fridge for about a half hour to set. When you’re ready to serve them, dust them or roll them into the dragon fruit powder or cinnamon. Makes about 18.
